Rum is a drink associated with warm sandy beaches with endless bliss under the sun.
Rum is a favorite in many countries, and there are practically no bars in the world that does not feature Rum beverage.
Traditionally Rum is a drink with origins dating back to the 1600s. Perhaps even farther back when alcohol’s sole purpose was medicinal.
The history of Rum’s origin, and rise to popularity is controversial and not pretty. Rum is produced from sugarcane juice or molasses. Sugarcane plants are native to Papua New Guinea. European explorers introduced Sugarcane, commonly referred to as tall sweet grass, to Asia and the Caribbean. Ultimately Barbados is credited with the global popularity of Rum. The Caribbean, as we know, is recognized for some of the finest Rums in the world, also nicknamed Kill Devil.
During the colonial period, Rum was an important trading commodity, and many saw their fortunes rise. The trade was so profitable that it inspired the Sugar or Plantation/Revenue Act of 1764. In an era where oceanic travel was forefront, Rum was preferred, compared to wine and beer. As Rum, was more tolerable for long voyages and faired well in extreme weather. It was a drink for all the poor consumed it neat or with water, while others used sugar and lime to make it more palatable. Ultimately this was the start for many rum original rum-based cocktails.

- Copalli Rum
Mayan Tai~ Recipe/Picture Copalli

- 1 oz of White and 1 oz Barrel Rested Copalli Rum
- ¾ oz Lime juice
- ½ oz dry curacao
- ½ oz orgeat
Shake the rums, lime juice, orgeat, and curacao with ice, and strain over crushed ice in a double old fashioned glass. Garnish with mint bouquet (optional powdered sugar dusting)
2. Tanduay Rum

4 pcs calamansi – muddled (see calamansi below)
2 ginger – sliced
15ml simple syrup
45ml Tanduay Rum
Ice
Instructions
Muddle calamansi, and ginger slices in the shaker. Add simple syrup and rum then shake.
Strain over ice into rocks glass.
Garnish: ginger
Calamansi: Philippine lemon/lime. You can substitute with regular lime.
Bartender Tip: For extra kick add a single slice of fresh cut green pepper.

- 2oz 504Silver
- 1oz Pineapple Habanero Syrup
- 1oz Grapefruit Juice
- 1oz Orange Juice
- 1oz Mango Juice
- 1oz Lime Juice
- 2 dashes of chocolate chili bitters
- 4 dashes of paridiso bitters
Add all the ingredients into your shaker with ice and shake until cold. Strain into a Collins class over ice and garnish with mint.
5. Koloa Rum

1.5 oz Kōloa Kaua’i Coffee Rum
1 oz Amaro
75 oz Bitter Sweet Liqueur (Campari)
.5 oz Honey Syrup
Garnish: Orange Twist and Honeycomb
Instructions: Shake Kōloa Kaua’i Coffee Rum, amaro, Campari and honey syrup in a shaker with ice for 15 seconds. Using a double strainer, strain over fresh ice and garnish with an orange twist and honeycomb.
